The Exchange's Davante Burnley, Justice Akuezue and Cedric Charle are teaming up with chef Gage White to develop an evening of creole-Japanese fusion sushi and nigiri.That means a mix of traditional rolls and fish along with dishes like the crawfish roll (crawfish salad, avocado, and cucumber), blackened salmon roll (panko fried shrimp, fire roasted red pepper, and avocado topped with blackened salmon), jambalaya roll (andouille sausage, crab meat, celery, red onion, and tomato, topped with Japanese creole sauce), and the alligator roll (cajun alligator, roasted red pepper, avocado, and cajun remoulade sauce).
