The Red Dunn restaurant in the Porter & Trumbull Hotel is accepting reservations for June 1 on its website.
Chef Jay Gundy - who formerly ran the kitchen at Cork Wine Pub and worked in several other popular kitchens - will offer a range of contemporary American plates for breakfast, lunch, and dinner. He describes himself as "a purist, with a strong desire to stay true to all-natural, locally sourced staples as a basis for each menu item."
Dishes include a 28 day dry aged prime strip steak, oysters, or breakfast options like the Huevos Benedictos (two black bean cakes, two chorizo patties, two eggs, Hollandaise, avocado, and salsa.)
The Porter & Trumbull Hotel underwent a $12 million renovation before it reopened in May 2016.
