downtown Detroit steakhouse Prime + Proper opens of Friday.
The 175-seat restaurant was built out over the last year on the ground floor of the Capitol Park Building at Griswold and State streets. In addition to the main seating area, there's a 20-seat private dining section, an invitation-only lounge, and 65-seat patio.
It's the latest product of restaurateur Jeremy Sasson who's behind Birmingham and downtown Detroit's Townhouse, and Heirloom Hospitality. He brought in lauded executive butcher Walter Apfelbaum who previously told MT
that Prime + Proper will be a far more interactive and personal steakhouse than anything we’ve previously seen in Detroit.
“It’s about education. This is an experience, not something at an everyday steakhouse. You don’t just choose what looks good on the menu … a steakhouse should be a lot more than that,” he says. “We want you to use all the senses in the experience – seeing, smelling, touching, tasting. We want to educate you. Most people go to steakhouse and say ‘Give me that filet or a ribeye’ but they don’t understand what they’re ordering.
“If you’re going to get a ribeye, let’s figure out how to get a perfect ribeye for your personality and tastes.”
He'll preside over a dry age room and in house butcher shop that offers items like a Japanese A-5 Wagyu strip, Creekstone Farms filet mignon, 14 day dry aged lamb chops, or 32-ounce tomahawk ribeye.
If you're not in the mood for meat, find oysters, hamachi crudo, caviar, and king salmon tartare. Or try entrees like seven-day dry aged duck, scallops, Ora king salmon, or fried chicken.
