For a Side Tonight: Apple Berry Bake

FINDING SIDE DISHES that are good, good for you and quick to make can be a tall order. Need something to go with nearly anything? Want to serve up a dish that will garner some recipe requests? Apple-Oatmeal-Berry Bake is so goodit could be an emergency dessert, should that fancy cake ever fail to rise. As with all our offerings, feel free to swap out what you don’t like, or add things we don’t call for.

INGREDIENTS

½ cup all-purpose flour

½ cup whole-wheat flour

1 cup oatmeal

½ cup firmly packed light brown sugar

½ cup margarine, melted

1 heaping teaspoon ground cinnamon (optional)

1 (16-oz.) can whole-berry cranberry sauce

1 (16-oz.) can sliced peaches in juice

½ cup fresh (frozen) cranberries

½ cup fresh (frozen) blueberries

1 (20-oz.) can apple pie filling (or 2 large Granny Smith apples, peeled, cored and sliced thin)

DIRECTIONS

Preheat oven to 350°.

Combine flours, oatmeal, brown sugar and cinnamon in a bowl. Add margarine, stirring until well blended.

Pour half of the oatmeal mixture into a lightly greased 9- x 13-inch baking dish.

In a separate bowl, combine cranberry sauce, peaches, berries and pie filling, placing the ingredients above the bottom layer of oatmeal mixture. Top with remaining oatmeal mix.

Bake, uncovered, for 45 minutes. Yields 6–8 servings.
