New to 2015, Michigan-based New Holland Brewing updated the recipe for its flagship Mad Hatter Midwest IPA — somewhat of a risky move considering the beer, first brewed in 1998, has become one of the brand's most popular products. Plus, changes made to the Mad Hatter meant making changes to its family of spin-offs, which includes the MI Awesome Hatter, Oak Aged Hatter, Rye Hatter, Tasmanian Hatter, and the Imperial Hatter.
The revamped line made its public debut at New Holland Brewing's annual "Hatter Days" street party in June, and the verdict appears to be in: The new line is a hit. Changes to Mad Hatter include adding Michigan-grown Cascade and Citra hops to the brew's Centennial hop profile. New Holland Brewing, based in Holland, has also adjusted its grain bill, which means the Mad Hatter has a higher alcohol by volume.
For Imperial Hatter, the lighter malt profile coupled with the higher ABV makes for an easy-to-drink brew with signature grapefruit and citrus notes. New Holland Brewing recommends pairing it with anything with "spicy heat, citrus, and aged blue cheese."
