Sarap pop-up puts modern spins on Filipino cuisine

OK, this is a few weeks off, but given the way these fledgling food concepts can fill up fast, it’s probably best to mention it early. Co-founder Dorothy Hernandez says it’s called Sarap, and it’s focused on Filipino food. Rather than serve that cuisine’s classics, Sarap (Tagalog for “delicious”) “aims to put inspired, modern spins on Filipino cuisine while paying homage to the traditional flavors that first-generation Filipino-Americans loved while growing up.” Chef Jake Williams is charged with creating a menu that’s refined and elevated, using quality ingredients that are seasonal and local when possible. Williams and Hernandez call Filipino fare “the original fusion cuisine because it has influences of Spanish, Chinese, and Malay cultures.” Excited? Want to reserve your spot?
