Erika Boyd and her life and business partner, Kirsten Ussery, have hit upon something new: reinterpreting an often unhealthful cuisine — soul food — as a life-giving, healing vegan menu. The fare from Boyd's kitchen is plant-based, organic, and sourced as locally as possible. While it's a novelty, it's also a busy eatery that gets repeat customers, especially when people find out that tofu can taste just like catfish.
