Monk Beer Abbey, the latest establishment to open in the Bastone complex at Fourth and Main, serves up a host of tasty victuals to soak up your brew. Among these is a quartet of open-faced knife-and-fork “sandwiches.” But instead of piling meats and veggies onto mere bread, Monk uses a crispy savory waffle, as befits the restaurant’s Belgian theme. Our favorite is the pulled chicken with grapes and aioli, but pork lovers will delight in the shaved pork belly waffle with tasso, bacon and pancetta. A cold, crisp Belgian abbey ale is just the thing to sip alongside.
