Michigan Hell's Kitchen alum Jared Bobkin will open a new restaurant in downtown Brighton next week.

He tells Livingston Daily the venture will be called Bourbons and the restaurant's owners describe it as "focused on smoked and Southern food with crafty cocktails and beer and a cool vibe."

Bobkin, who appeared in last year's season 15 of the cooking competition television show Hell's Kitchen and Hell's Kitchen All-Stars, says that means dishes like brined and buttermilk fried chicken and short rib.

"We're also going to do a little bit of barbecue, a little bit of what I called 'dirty South,' where it's hitting all your basics, like fried chicken, your shrimp and grits, grouper, your boiled peanuts," Bobkin tells the newspaper. "Also, comfort food, like pulled pork, smoked biscuit, and baby back ribs."

The restaurant also holds a stone pizza oven and will serve pies with toppings like figs and Marsala sauce with roasted pears and Roquefort blue cheese.

The restaurant's owners — siblings Elena Borg, Hana Filipovic, and Lou Lucaj — say that the space at 440 W. Main St. will be "a strong, masculine, Southern bourbon joint" but will also "be comfortable for the ladies."

Behind the bar, bartender Toni Pomranky will offer a strong selection of bourbons and craft cocktails.

A soft opening is scheduled for Friday, Feb. 23 and the restaurant opens to the general public Tuesday, Feb. 27.
